Drain the pineapple pieces and reserve the syrup. Place the onion and pineapple pieces into a saucepan and allow to simmer until the onion is tender. Add the sugar, vinegar and reserved pineapple syrup and bring to the boil.
Mix the remaining ingredients with enough water to make a paste and add to the boiling mixture until it thickens. Season to taste and allow to simmer over a low heat for a further 15 minutes. Spoon into sterilized jars and seal.
