Place the sugar and water into a saucepan and heat gently until the sugar has dissolved.
Simmer gently for 10 minutes.
Take off the heat and cool.
Use a hand blender to puree the can of Rhodes Peach slices in its juice. Pass through a sieve into a bowl. Repeat with the Rhodes Pears and the Rhodes Guavas, keeping each fruit separate.
Divide the cooled sugar syrup between the three fruit bowls and stir to mix well.
Check the taste of fruit syrups and add some lemon juice if desired.
Pour the fruit syrups into separate shallow freezer dishes and freeze for at least 1 hour.
Remove from the freezer and flake with a fork.
Return to the freezer for another 30 minutes and then fork through again.
Repeat until all the liquid is frozen and flaked, and serve immediately from the freezer.
If you can’t be bothered to do all this flaking, simply freeze your fruit syrup overnight and flake with a fork when frozen. Your granita will have a coarser texture, but it will be no less delicious. Should you want to only make one flavour of granita, make only half the amount of sugar syrup and use about 200ml for one can of Rhodes fruit. The remaining sugar syrup will keep in the refrigerator for your next batch.
