The French claim that nothing beats butter in cooking! We don’t entirely disagree, but as mothers we are mindful of nutrition and regularly cooking with too much fat is not a great idea for the family’s health. However ... Butter and Brussel sprouts are a marriage made in Heaven, especially if you want to improve the veggie component in your family’s diet. This is one time when we choose the lesser evil … more fat but also more nutrition!
Steam or cook the Brussel sprouts in a little water until done. Drain and dry with a paper towel. Set aside until ready to serve.
Just before serving, heat the butter in a large frying pan until bubbly. Add the Brussel sprouts and sauté on high heat until lightly browned. Season to taste and sprinkle in parsley. Toss well and serve.
