Pea Fritters


  • 250 g bacon
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 packet Chilli Bite Mix
  • 1 tin (410 g) Rhodes Processed Peas
  • 100-150 ml water
  • Oil for deep-frying

Chef's hint: For extra flavour, stir a chopped chilli into the mixture. Replace the Rhodes Processed Peas with Rhodes Chickpeas.


Cut the bacon into small pieces and fry in a hot pan until crisp. Place on kitchen paper and keep aside. Fry the onion and garlic in the same pan until golden brown and done. Add the Chilli Bite Mix, processed peas, bacon, and onion-and-garlic mixture and water to a mixing bowl and combine thoroughly. Add more water if the mixture is too dry. Heat the oil in a deep saucepan and place spoonfuls of the mixture in the oil. Fry until golden brown and done. Serve with dipping sauce.
