Robust Pasta Salad


  • 250 g pasta, gemelli or screw shape
  • 500 g green beans, cut French style
  • 4 ripe tomatoes
  • 100 g calamata olives, stoned and halved
  • chopped garlic to taste (do not be shy)
  • salt and freshly ground black pepper
  • 150 ml prepared vinaigrette dressing
  • 500 ml rocket, or any other peppery salad leaves


Cook the pasta as indicated on the pack. Rinse, drain and place in large salad bowl. Cook the green beans for a minute in boiling water, drain and add to the pasta. Allow to cool completely.

Remove the skins from the tomatoes, halve them and scoop out the pips. Slice tomatoes into strips and add to the pasta and beans. Add the olives and garlic and season to taste. Pour in the dressing and toss well. Set aside until required.

Just before serving, add the rocket and toss lightly. Serve at once.
