This sunny salad offers a great-tasting alternative to the normal dreary bowl of lettuce and tomatoes and will go well with some grilled lemon and rosemary lamb chops – perfect for our sunny South African weather!

Pasta, Sundried Tomato & Basil Pesto Salad

Ingredients


  • 125 ml sundried tomatoes
  • 250 ml boiling water
  • 500 ml cooked pasta rice, cooled
  • 125 ml basil pesto
  • 40 g pillow pack rocket
  • salt and freshly-milled black pepper
  • lemon infused olive oil



Method


Place the sun-dried tomatoes in a mixing bowl or jug. Pour the boiling water over the tomatoes and allow to soften for about 10 minutes. Once soft, drain and pat the tomatoes dry and set aside to cool.

Place the pasta rice in a large mixing bowl and add the pesto. Mix until well combined. Add the sun-dried tomatoes and rocket, season to taste, toss well and serve with a light drizzle of lemon infused olive oil.
