By adding a few delectable ingredients to butter, you will always have great additions to piping hot breads, veggies, fish, beef, lamb or chicken.

Flavoured Butters

Ingredients


  • SWEET PEPPER & CHILLI BUTTER
  • 125 g soft butter of your choice
  • 45 ml extremely finely diced sweet red pepper
  • 10 - 30 ml finely chopped red chilli
  • 45 ml finely chopped coriander leaves
  • OLIVE-ANCHOVY BUTTER
  • 125 g butter of your choice
  • 45 ml finely chopped green olives
  • 30 ml finely chopped anchovy fillets
  • 10 ml finely grated lemon rind
  • 10 ml lemon juice
  • HONEY-MUSTARD BUTTER
  • 30 ml yellow mustard seeds
  • 65 ml piping-hot honey
  • 10 ml prepared hot English mustard
  • 125 g soft butter of your choice



Chef's hint: To store your flavoured butters, spoon into a a few small dishes, cover tightly with a lid or cling film and keep in the fridge or freezer. Alternatively, shape the butter mixture into log-style roll and cover tightly with cling film. Refrigerate or freeze and use as required, cut into round disks.

Method


For the SWEET PEPPER & CHILLI BUTTER, mix the ingredients well together and serve with grilled fish, chicken, lamb, beef or veggies.

For the OLIVE-ANCHOVY BUTTER, mix the ingredients well together and serve with pasta, rice, veggies, ciabatta breads, grilled fish or chicken.

For the HONEY-MUSTARD BUTTER, place the mustard seeds in a bowl and add the hot honey. Set aside for an hour. Then mix everything well. Delicious with roast pork, ham, bacon, lamb or chicken.
