Quick Bread with Variations
Ingredients
- 500 g Sasko Self Raising Flour
- 5 ml Salt
- ground black pepper
- 25 ml sugar
- 80 g butter
- 200 g feta cheese crumbled
- 200 g spinach leaves chopped
- 125 ml buttermilk
- 250 ml water
Chef's hint: Omit spinach and feta and add 125 ml chopped sun dried tomatoes and 100 g pitted chopped olives
Method
Combine sifted flour, salt, pepper and sugar into a large mixing bow, rub in the butter, stir in the cheese and spinach and add the buttermilk and enough water to make a stiff dough. Knead lightly.
Divide the dough in half and shape into 2 x10 cm round discs on a greased baking tray, mark into 8 wedges and bake at 180˚C for 30 – 40 minutes until cooked and golden brown. Serve warm with butter.
Yields 1 loaf.
