This salad has become a firm favourite with both family and friends. Serve it with warm crusty bread, accompanied by garlic-flavoured low-fat spread.

Peach & Ham Salad


  • Basil Vinaigrette
  • 75 ml basil, finely chopped
  • 20 ml mild American mustard
  • 30 ml yellow mustard seeds (optional)
  • 30 ml balsamic or red wine vinegar
  • 15 ml honey
  • 125 ml peach or apricot or mango juice
  • 75 ml olive oil
  • Peach & Ham Salad
  • 1 pillow pack mixed herb and lettuce leaves
  • 1 medium butter lettuce, broken into pieces
  • 1 bunch spring onions, cut into julienne strips
  • 400 g mixed ham slices (gypsy, Black Forrest, rolled Kasseler), cut into strips
  • 1 x 410 g can Rhodes Peach Slices, drained
  • 6 dill cucumbers, thinly sliced lengthways
  • to garnish: whole basil leaves


First make the vinaigrette. Combine all the ingredients except the oil. Then slowly whisk in the oil until the mixture thickens. Chill until required.

Just before serving, line a platter with the salad leaves and scatter with the strips of onion and ham. Tuck in the peach slices and dot with the dill cucumbers. Garnish and serve at once with the vinaigrette dressing.
