Oysters are not for everybody and neither are they for everyday but even people scared of eating raw food will enjoy this recipe as the warm sauce just-cooks the oysters.

Fresh Oysters with Lemon-Butter Sauce


  • 125 ml lemon-butter sauce
  • some coarse sea salt
  • 12 live oysters, shucked (letís get sexy and call them topless)
  • 120 g smoked salmon
  • herb sprigs of your choice


First, prepare the lemon-butter sauce from this recipe and keep warm. Scatter a good amount of the salt onto two individual serving platters and arrange the oysters on top (the salt helps to keep them steady).

Next, while still piping hot, pour a generous spoonful of the sauce on top of each oyster. The warm sauce will partly-cook the oysters, delish!

Garnish with a sliver of smoked salmon and a herb sprig or even slices of lemon and enjoy Ö
