This is easy, good fast food! You can fill the tacos with anything imaginable - but for us, the sweet little pre-cooked prawns are a treat. And very quick to use, just the thing for a busy mom to have on stand-by.

Spicy Prawn, Avo & Mango Tacos

Ingredients


  • 6 homemade or bought tortillas
  • 400 g cooked peri-peri prawns (from Woollies)
  • 2 avocados, cubed or sliced
  • 1 large mango, cubed or sliced
  • 6 spring onions, chopped
  • salad leaves
  • fresh mint and basil or coriander leaves
  • 180 ml plain yoghurt
  • 90 ml sweet chili sauce



Chef's hint: For an economical option, substitute the prawns with canned tuna chunks or cooked chicken strips - or for a meatless option, grilled haloumi cheese.

Method


Warm the tortillas briefly in a dry frying pan. Pile all the ingredients (except the yoghurt and the sweet chili sauce) on top of the tortillas. Fold them over and place on a serving platter. Whisk together the yoghurt and sweet chili sauce and serve at once.
