One of the simplest yet freshest salads you can serve on a clear, warm autumn day ... so as if to pave the way for winterís welcome citrus fruits.

You can replace the chicken with paper-thin slices of smoked beef, available at the deli counters in your supermarket.

Smoked Chicken & Orange Salad with Creamy Spicy Dressing


  • 3 Ė 4 handfuls of mild lettuce leaves (like curly or butter lettuce)
  • 125 g very thinly sliced smoked chicken breast (usually available at the deli counter)
  • 2 Ė 3 peeled oranges (all white pith removed), cut into segments
  • 250 ml thin English cucumber slices
  • 45 ml flat-leaf parsley or coriander leaves, roughly torn
  • 90 ml tangy mayonnaise
  • 90 ml sour or plain cream
  • finely grated zest of an orange
  • 30 ml fruity chutney
  • 15 ml mild curry powder
  • little orange juice if required

Chef's hint: If you are watching your fat intake, use low-oil mayonnaise and reduced-fat cream. You can even replace some (or the whole lot) of the mayonnaise and cream with fat-free yoghurt.


Tear the lettuce leaves into bite-size pieces and arrange on a salad platter. Tuck in the chicken slices followed by the orange and cucumber. Scatter with the parsley or coriander leaves.

Whisk together the mayonnaise, cream, orange zest, chutney and curry powder. Thin down to your liking with orange juice.

Serve the salad with the dressing on the side and some crusty health bread as a delicious and elegant light meal.
