Spicy Chicken & Bean Nachos
Deliciously quick!

Ingredients


  • 15 ml canola oil
  • 2 chicken breast fillets, sliced thinly
  • salt and freshly-milled black pepper
  • 10 ml finely chopped garlic
  • 10 ml red chili flakes (optional)
  • 1 x 450 g box Werda Mexican Bean Salad
  • 4 x 250 ml nachos (corn crisps)
  • 250 ml grated cheddar cheese
  • 250 ml sour cream
  • 4 spring onions, coarsely chopped
  • 65 ml coriander leaves, coarsely chopped



Method


Heat the oil until smoking hot in a frying pan and add the chicken strips. Stir fry on high heat for 30 seconds or until just cooked. Season to taste with salt and pepper and add the garlic, red chili flakes (if using) and the Werda Mexican Bean Salad. Stir until heated through then remove from heat.

Arrange the nachos (corn chips) on four small, shallow and heat-proof serving dishes. Place the dishes onto a baking tray.

Place a portion of the chicken-and-bean mixture on top of the nachos and sprinkle with the grated cheese. Place the tray briefly under a hot grill until the cheese melts.

Remove from the oven and top each dish with sour cream, spring onions and coriander leaves before serving piping hot with spicy tomato relish and creamy guacamole on the side.

Yields 4 portions as a light main course and 6 or more as a snack or starter.
