Butter Bean Brownies


  • 1 x 420 g tin of butter beans, drained and rinsed
  • 4 large eggs
  • 375 ml sunflower oil
  • 5 ml vanilla essence
  • 500 ml sugar (400g)
  • 250 ml Sasko Cake Flour (120g)
  • 125 ml cocoa powder
  • 125 ml peanuts, chopped (keep some for decoration)

Chef's hint: Use 1 cup of any cooked beans you have handy instead of the tinned beans.


Preheat the over to 180C. Line the bottom of a square 20cm x 20cm baking tin with baking paper.

Mash the butter beans, place the eggs, oil and vanilla together in a bowl. Whisk the ingredients together. Add the rest of the ingredients and mix to make a batter.

Pour the batter into the baking tin, sprinkle with a few extra chopped nuts. Bake for 25-30 minutes, or until springy to touch. Cool in the tin for 10 minutes and cut into 12 squares.
