Chilled Spicy Carrot & Lime Soup


  • 1 kg baby carrots or carrots julienne
  • 1.5 litres prepared chicken or vegetable stock
  • 10 ml curry powder
  • 2.5 - 5 ml cayenne pepper (or to taste)
  • 125 ml lime cordial (not juice)
  • 250 ml coconut milk
  • zest of 2 limes
  • to serve: coriander leaves, chopped (optional)


Place the carrots with the stock, curry powder and cayenne pepper in a large saucepan. Bring to a boil, cover, reduce heat and cook for about 30 minutes or until very tender. Add the lime cordial and coconut milk and purée until smooth. Strain and chill. Serve garnished with the zest and chopped coriander, if using.

Serves 6 – 8.
