Hearty Roast Veg with Meatballs
One dish wonder!

Ingredients


  • 750 g Nature’s Garden Hearty Roasting Veg
  • 3 large cloves of garlic, slivered
  • olive oil
  • 1 x packet roast veggie-bake powder
  • 8 medium uncooked meatballs (about 600 g)
  • freshly ground black pepper
  • chopped Italian parsley
  • grated Parmesan cheese



Chef's hint: You can lightly brown 8 nice, thick lamb chops and then add them to the veggies instead of the meatballs for a variation once in a while. In this case, omit the cheese and add some torn mint leaves and lemon juice. Yum-me!

Method


Place the Nature’s Garden vegetables and garlic in a roasting tin and drizzle with olive oil and the veggie-bake powder. Toss well and bake at 180 º C for 20 minutes or until the veggies are just cooked.

Now sprinkle the meatballs generously with olive oil and pop into the pan with the veggies. Continue to bake at 180 ºC for 20 minutes or until the veggies as well as meatballs are cooked.

Remove from the oven, season to taste with pepper and toss lightly. Sprinkle with the cheese and parsley and serve.
