Wraps with a difference, this … no bread in sight! And it’s one of the easiest appetisers to prepare. You just need to have the stock on hand ... and be frugal – not because the ingredients can be costly, but these are big tastes and big portions may spoil what lies ahead … that main course over which you’ve slaved for hours!

Parma, Pear & Blue Cheese Wraps


  • 250 ml cold water
  • 65 ml lemon juice
  • 2 pears, cored and cut into slim wedges
  • 8 12 slices of Parma ham (prosciutto)
  • 8 12 slim batons of blue cheese
  • 24 or more whole rocket leaves
  • 12 or more whole basil leaves
  • lemon-infused olive oil (optional)
  • freshly-milled black pepper

Chef's hint: You can substitute the pear for melon to re-create an old classic.


Mix together the cold water and lemon juice and pour over the pear slices. Allow to steep a few minutes to prevent discoloration. Drain and pat dry thoroughly.

Just before serving, lay a slice of Parma ham on a board and lay a slice of pear, blue cheese, rocket and basil leaves on one end and roll up, making sure some of the filling ingredients protrude above the ham roll. Stick into small glasses and if using, drizzle with olive oil and dust with black pepper then serve.

Yields 8 to 12 appetisers
