Cheesy Chunky Polenta

Ingredients


  • 1.5 litres prepared chicken stock
  • 375 ml very coarse yellow or white (or half-half of each) maize meal
  • 65 ml butter
  • 325 ml grated mature cheddar cheese
  • 180 ml grated Parmesan cheese
  • salt and fine white pepper



Method


In a large saucepan, bring the stock to a boil. Reduce the heat to medium and add the maize meal while whisking until the mixture begins to thicken. Be careful of the hot mixture splattering Ė use a large whisk and have the potís lid ready in the other hand to cover it when the splatters start!

Once the maize meal and stock are mixed properly, reduce heat to the lowest temperature, cover with the lid and simmer for 10 minutes.

Now check consistency: if necessary, whisk in sufficient boiling water to create a thick custard-like consistency. Cover and cook for 50 minutes or according to the pack instructions.

When cooked, stir in the butter and cheeses. Season to taste and serve.
