A quesadilla is a large, toasted Mexican ‘sandwich’ of two tortillas, held together by a delicious filling. Tortillas are sort-of like pancakes or rotis and they’re made with flour or maize meal or both. Here is a wonderfully-quick and wholesome meal that even a teenager or hubby can prepare.

You’ll need some flour tortillas, some leftover chicken meat and a few bits and bobs lying in the fridge. The recipe below makes one large quesadilla that is easily shared. If you need more, simply double or treble the quantities.

You’ll need some flour tortillas, some leftover chicken meat and a few bits and bobs lying in the fridge. The recipe below makes one large quesadilla that is easily shared. If you need more, simply double or treble the quantities.

Ingredients

  • 325 ml cooked chicken meat, shredded or cut into small pieces and seasoned to taste

  • 250 ml grated white cheddar or mozzarella cheese

  • 125 ml diced tomato

  • 125 ml finely chopped spring onion tops (the green parts)

  • 30 ml finely chopped green chili (optional)

  • 65 ml tangy mayonnaise (just enough to moisten the filling)

  • 2 large flour tortillas

Directions

  • Lightly mix together all the ingredients except the tortillas. If you like seasoning, add more now according to your own taste.
  • Spread the filling out on one tortilla and cover it with the second tortilla. Press down firmly to form a quesadilla.
  • Heat a non-stick pan then carefully transfer the quesadilla to the pan and cook on medium-high heat for a few minutes until lightly browned. Flip the quesadilla and cook the other side, pressing down onto the top of the quesadilla with a broad spatula, until lightly browned and the filling piping hot with the cheese melted. Slide onto a plate, cut into quarters and serve with Mexican Corn Salsa, sour cream and Guacamole.
  • Serves 1 (but two can easily share as it is large and filling!)

Chef’s Hint

  • You can fill tortillas with just about any filing imaginable. From spicy Mexican minced beef to smoked fish to grilled vegetables. And you can combine your filling with any sauce or salad ingredient.
