Smoked Beef & Peach Salad

This salad will hit the spot on a warm summers day!

Ingredients

  • 1 Small pack frilly green lettuce leaves

  • 250 ml Roasted red pepper slices

  • 150 g Smoked beef slices, cut into thin strips

  • 1 x 425 g Can peach slices, drained

  • 250 ml Basil leaves, coarsely torn

  • 180 ml Bought light yoghurt and herb salad dressing

Directions

  • Arrange the lettuce on a salad platter and top attractively with the rest of the ingredients.
  • Drizzle with the dressing and serve.
